Ingredients

  • 3 large eggplants
  • 1 teaspoon salt
  • 1 cup all objective flour
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 large eggs
  • 1 cup panko breads crumbs
  • 1 cup Italian design bread crumbs
  • 1 teaspoon garlic clove powder
  • 2 mugs marinara sauce
  • 8 oz . fresh mozzarella sliced
  • ¼ cup chopped new basil
  • 1/2 cup newly grated parmesan parmesan cheese divided

Instructions

  1. Cut eggplant into 1/4 in . rounds. Construct in one layer on the papers towel lined cooking sheet and sprinkle with sodium. Let sit one hour to release dampness.
