Ingredients

  • 1 lb potatoes chopped
  • 1 tbsp essential olive oil
  • 1 bell pepper chopped
  • 2 tbsp taco seasoning
  • 15 oz can black color coffee beans drained and rinsed
  • 15 oz can refried beans
  • 8 taco-sized flour tortillas
  • 2 mugs lettuce chopped
  • 2 avocados diced
  • Jalapeño Cilantro Sauce*
  • cilantro, limes for serving

Instructions

  1. Add the cut potatoes to a big pot and cover up with drinking water. Bring the drinking water to some boil and prepare potatoes until fork sensitive (around 15-20 moments). Deplete the potatoes.
