These Cauliflower Taco Bowls with Creamy Vegan Cilantro Ranch are usually filled with brownish grain, bell peppers, onion & coffee beans. A wholesome & delicious vegan supper!

Ingredients

FOR THAT CAULIFLOWER

  • 1 tbsp essential olive oil
  • 2 cups cauliflower approximately chopped
  • 1/2 reddish bell pepper chopped
  • 1/2 reddish onion chopped
  • 2 tbsp taco seasoning

FOR THE Dark brown RICE

  • 1 tbsp essential olive oil
  • 1/2 reddish bell pepper chopped
  • 1/2 reddish onion chopped
  • 1 jalapeño chopped
  • 2 cups brown grain cooked
  • 1 cup freezing corn
  • 1 15-ounce can black color beans
  • 1 4-ounce can green chilis
  • 2 tbsp taco seasoning
  • 1/4 mug salsa*

FOR THAT CILANTRO RANCH

  • 1/2 mug vegan mayo
  • 1 tbsp apple company cider vinegar plus much more to taste
  • 1/2 number cilantro
  • 4 cloves garlic peeled
  • 5 basil leaves
  • sodium & pepper to taste
  • drinking water as needed


FOR THAT SALAD

  • 5 mugs leafy greens
  • 1 avocado chopped
  • cilantro, lime wedges for topping


Instructions

  1. Preheat the stove to 425 levels and collection a cooking sheet with parchment papers.
  2. Add all the cauliflower ingredients towards the cooking sheet and toss to coating evenly. Bake within the oven for half an hour, tossing halfway.
  3. As the cauliflower is cooking food, prepare the grain mixture.
  4. Heat essential olive oil in a skillet over medium warmth. Include bell pepper, onion and jalapeño towards the skillet and sauté for five minutes. Add the rest of the rice components and toss to mix. Turn warmth to reduced and stir sometimes until you will be ready to eat.
  5. To get ready the cilantro ranch include all the ingredients (except water) to some food processor. Flavor and adjust sodium, pepper and vinegar to flavor. Thin with drinking water until desired regularity is reached.
  6. To assemble, coating greens, rice combination and cauliflower in each dish.** Best with avocado and cilantro. Drizzle with cilantro ranch and function with lime wedges!

*Use your preferred – I utilized a spicy chunky salsa.
